My Newest Invention

This weekend was a busy one with lots of homework and other things buzzing around. I haven't gotten a chance to go grocery shopping,  and so we've been eating lots of made up things. We had pancakes for dinner on Monday. They were delicious! On Sunday we had some home made pizza. It was really good too, I decided to post the recipe.

8" pre-cooked glutten free pizza crusts (as many as you need, got mine at Smith's)

Cotija cheese (you can find this at Latino food stores)

Colby Jack cheese

Lots of veggies (we used green onions, red peppers and green peppers)

Organic tomato sauce (I got mine at Smith's)

Cut veggies into small squares. Place the pizza crusts on cookie sheets. Spoon enough tomato sauce to cover the crust. Layer on the Colby Jack cheese then sprinkle the cotija cheese. Spread veggies over the cheese. Cook for about 10 minutes at 375 and your done!
